Homemade Lemon Curd

My neighbor Marcie is so sweet.  She's so friendly, always has little fancy things for my daughter and is just so cool.  Everyone should have a neighbor like Marcie.

The other day I was making some of my homemade lemon curd to fill some cupcakes.  Usually I have a ton left over so I decided to give some to Marcie!

To quote her:  "Allyson, your lemon curd is to die for."

for the recipe

Lemon curd goes great on toast, as a compliment to fresh raspberries, as a cake filling.... if you like lemon, you'll find something to use it for!

Memorial Day

This is a cake that I made for a barbeque on Memorial Day Weekend.

I doubled my standard white cake recipe, and poured it onto two cookie sheets, to make a traditional sheet cake. It's frosted and filled with homemade cream cheese frosting, and decorated with blueberries and raspberries.

Using the left over frosting, I piped stars in between the raspberry stripes. To make sure that I had 7 red stripes and 6 white stripes, I measured the width of the cake and divided by 13. Then I made 13 marks with a toothpick and added the "stars and stripes".

Ice Cream Cookies

I was asked by a local photographer if I could make some goodies for her upcoming photoshoot.  She's doing a "Summer Looks We Love" theme and she thought it would be cute to use some treats as props.

Her only request was to use a pretty blue color.

Kim from the TomKat Studio remarked how perfect these would go with her ice-cream shoppe party circles inspired by Gymboree!

I suppose she is absolutely right!

Wishing summer would hurry up and get here!

These cookies will do, for now.
